What to Look For in an Omelette Pan
Have you ever tried to prepare an omelette in a large frying pan? If so, you’ll know how difficult it is to create a thick, fluffy omelette. Instead of sticking together and creating a thick omelette, the large size of the pan means the beaten eggs are far more likely to spread out and thin.
This makes size the number one factor you should look for in an omelette pan — namely, a small size. As a general rule, we recommend looking for an omelette pan that’s eight to nine inches.
An eight to nine inch pan is large enough to produce a thick, soft and perfectly cooked omelette from three or four eggs. Most of the omelette pans we’ve recommended fit into this size bracket.
If you like a larger omelette and use five or six eggs, you can upgrade to a 10 inch pan. It’s best to avoid larger pans unless you like a thin, pancake-like omelette without a soft center. While it’s somewhat obvious, it’s also best to avoid griddle pans with grill patterns.
Since you’ll need to turn your omelette as it cooks, you should also look for a pan with a gradual rise around its diameter. A shallow lip and soft edge makes it easier to reach into the pan with a spatula and flip your omelette.

The T-fal E93802 is a non-stick frying pan that’s perfect for cooking omelettes. It has a non-stick surface, meaning there’s no need to use excess butter or cooking oil, as well as a Thermo-Spot heat indicator that tells you when the pan has reached the right heat for cooking.
This frying pan comes in a variety of sizes, ranging from eight to 12.5 inches. We recommend the eight inch pan for preparing omelettes, as the two larger pans disperse the eggs over too large a surface.
One of the biggest advantages of the E93802 is its Thermo-Spot indicator. Located right in the center of the pan, the heat indicator light up when the pan reaches the perfect heat for cooking, helping you avoid burning your eggs or pouring them into a cold pan.

Measuring seven inches across, the Cuisinart 722-18NS is an excellent pan for preparing small omelettes and scrambled eggs. Because of its small size, this pan is best for omelettes that use three eggs or less. It’s also available in eight, 10 and 12 inch sizes for preparing larger dishes.
Thanks to its aluminum encapsulated base, the 722-18NS takes very little time to heat up. It has no “hot spots,” as you would find on cheaper pans, with heat evenly distributed around the entire pan. This makes it easy to prepare omelettes without burning the center due to excessive heat.
It also has a titanium reinforced non-stick interior that reduces the amount of oil you need to use to prepare an omelette. The rim of the pan is tapered and lowers into the base smoothly, making it easy to flip omelettes, pancakes and other flat dishes.

Designed specifically for cooking frittatas, the Cuisinart FP2-24BK Frittata 10-Inch Nonstick Pan Set is also great for preparing omelettes. This pan set includes two frying pans that can lock into each other, making it easy to flip your frittata or omelette from one pan to the other.

It also has durable aluminum construction, allowing it to heat up quickly and spread heat evenly throughout the pan. Thanks to the durable hinge that separates the two sections of the pan, it’s easy to heat both surfaces evenly before flipping the contents.
At 9.5 inches across, this is a mid-sized pan that can hold 2-5 eggs. You can also use it to easily make filled omelettes by cracking 2-3 eggs into each side and lightly cooking them, with ham or vegetables on top of the eggs in one side. Close the pan for a large, thick and filling omelette.

Since this is a cast iron pan, it heats slightly slower than aluminum. However, it retains heat very well and distributes heat evenly throughout the cooking surface, making it perfect for flat dishes that require steady, even heat.
Because this isn’t a non-stick pan, you’ll need to apply oil, butter or another source of fat before you prepare your omelette. If you’re a health conscious chef, you’re ultimately best off buying a non-stick pan, as it’s very difficult to successfully cook eggs in this pan without using oil.
